In Ethiopia, you can usually classify coffee varietals into two categories, JARC (Jimma Agricultural Research Center) or regional landraces. JARC varietals were developed to increase resistance to rust, improve quality of cherry and also to heighten crop yield. There are roughly 40 varietals that fall in the JARC category. Landraces on the other hand are the type of coffee that grows wild in the forests in Ethiopia. It is estimated to be more than 10,000 varities of Arabica coffee among these.
