About:

The Castillo variety has some special requirements to produce due to its high bean mass. It’s sorted 9 times by hand before and after processing. Drying is strictly controlled so that you don’t get too much pulp flavour. The intention is to keep the coffee clean and to be able to taste the variety. The El Roble farm has mastered the Castillo variety but they also have an experiemental coffee garden with over 70 different varietals. This garden has allowed them to plant new varietals on the farm including Gesha and Mocca.
